Beat the Heat with Homemade Popsicle Treats!

OK, I know I am a bit late in writing this post as summer is over and school has begun. But where I live it’s still pretty warm and popsicle treats are still on my mind! This summer I came across several wonderful recipes for homemade popsicle treats and I’d love to share them with you!
There are many different types of popsicle molds at various stores. A friend of mine really likes ones like these Lickity Sip molds that have a little straw on the bottom so you can drink the juice that melts.
Below are a few recipes I have found. I like to use organic ingredients, so I modify recipes to my liking. Feel free to do the same!
Pineapple Orange Delight
1 small can pineapple
1 small can mandarin oranges
2 cups white grape juice
Mix together in blender. Pour into popsicle molds, freeze, and enjoy!
Creamy Orange Dream
1 cup plain yogurt
1 (12-ounce) can partly thawed orange juice concentrate
2 teaspoons vanilla
Stir together all ingredients in a large bowl, then pour into molds and freeze. Makes six to eight pops.
Watermelon Ice
2 1/2 cups cubed seedless watermelon
1/4 cup sugar
You can use a food processor or blender to blend watermelon and sugar until chunky-smooth, then pour into molds and freeze. Makes four to five pops. Also, you can try substituting some white grape juice for the sugar.
Blueberry Ice
2 cups (1 pint) fresh blueberries
1/2 cup sugar
1 cup water
1 teaspoon lemon juice
Stir first three ingredients in a pan over medium-high heat until sugar dissolves. Bring to a boil, stirring occasionally, until berries have burst, about five minutes. Mix in lemon juice. Cool to room temperature, then pour into molds and freeze. Makes six to eight pops.
